Melon with goat cheese, tomato and cucumber

Ingredients

1 (Piel de Sapo melon), peeled

12 tomatoes, sliced

16 slices of cucumber

100g soft goat cheese

2 tablespoons very finely chopped mint

DRESSING INGREDIENTS

3 tbsp olive oil

1 tablespoon red wine vinegar

1 teaspoon granulated sugar

Coarse sea salt and black pepper

PREPARATION

Cut the melon in halve and remove the seeds. Then cut the melon in 16 half circles. Take 4 plates put two semicircles Piel de Sapo melon in the middle of the plate, the cucumber slices next and them the back of the melon. Place 3 tomato slices on top of each plate and crumble the goat cheese sprinkle over the tomato. Mix al the dressing ingredients in a bowl, season with salt and pepper.

Drizzle the dressing over the salad and divide it over the coin.
